    Professor Black loved his peaches. In fact, he would use Warwick land to carry out agricultural experiments involving peach trees for the University of Stellenbosch. Today, the peach trees are gone, but his legend lives on in a wine as vibrant today as he ever was.

    In a country that makes as much Savvy Bee as South Africa, one needs to pick your sites carefully if you want to beat the rest. The Prof Black vineyards are high up in the foothills of the Simonsberg, with one of the blocks being 36 years old (that’s really old for Sauvignon). The wine carries an explosive vanguard of elderflower, nettles, ripe passionfruit, and lime. The palate is alive and zesty, with passionfruit and citrus elements lingering for days.
